Breakfast of champions.
Lately I’ve been diving deeper into the health sea and picked up a couple of goodies from the local organic food store - Out Of This World, Beeston. Since I’m not a fan of artificial supplements and I honestly believe you can get the best out of natural foods, I decided to boost my energy and immune system up by buying a bag of Organic Chia seeds (Nutiva, £6 for 340 grams). I know many people sprinkle Chia seeds in just about everything they eat as a supplement (smoothies, soups - as a thickener, cereals, you name it…). Vegans/vegetarians use Chia seeds in their meals to obtain essential fatty acids and minerals they may lack from not eating red meat/fish. So I decided to look up online for a couple of Chia Seeds recipe and found this amazing Chia Seed Porridge recipe from http://ohsheglows.com/2013/02/18/chia-seed-breakfast-bowl/
At only 60 calories/tbs, all you need is 1.5-2 tbs of Chia seeds soaked overnight in 1 cup of almond milk (26 cals) to make a large bowl of breakfast porridge/pudding. Chia seeds can expand up to 12 times in a mere 10 minutes when soaked in water and so it does the same in your stomach, retaining lots of liquid and keeping you fuller for longer, just like oats. On top of that, these tiny gems are filled with antioxidants, dietary fibre, protein, omega 3 fatty acids, calcium, iron & magnesium. How magical is that!?
Chia Seed Porridge/Pudding
- 2 tbs Chia seeds
- 1/2 banana, mashed
- 1 cup Almond/Hemp/Soy/ your preferred non-dairy milk
- Berries/Fruits/Nuts of your choice
The night before,
- Mash banana in a bowl
- Add in 2 tbs of Chia seeds
- Cover the mixture with 1 cup of non-dairy milk. Soak overnight or at least 2-4 hours.
During breakfast, simply sprinkle on top berries/fruits/nuts of your choice.
